Time: 20 minutes
Ingredients:
2 Eggs
2 tsp Oil
3 Green chilli
1 Tomato
1 Onion
1 tsp Ginger garlic paste
½ tsp Chilli powder
100 g Drumstick
4-5 Coriander leaves
Salt to taste
Method:
- In a pan, heat two tablespoons of oil and add finely chopped green chilli, onions, tomato ginger garlic paste, turmeric powder and chilli powder. Allow this to fry on a medium flame.
- As the oil starts to separate, add a glass of water and ten 2-inch long drumstick pieces.
- Cover and allow to simmer on a low flame until the drumstick is cooked tender. Add salt to taste.
- In a separate pan, take a tablespoon of oil and roast two boiled eggs. Once roasted, cut the eggs into halves and add to the other pan with drumsticks.
- Lightly toss all the ingredients, garnish with coriander and serve hot with rice.
