SPICED PUMPKIN PUDDING
Ingredients
150 grams pumpkin
120 grams brown sugar
2 eggs
30 grams butter
120 grams condensed milk
2 grams nutmeg powder
2 grams cinnamon powder
For Caramel sauce
75 grams sugar
35 grams cream
50 grams butter
Method
  1. Cut pumpkin in small cubes and cook it in boiling water until tender.
  2. Cool this mixture down and make a puree, which should then be mixed with all other ingredients into a smooth paste. Pour this into a greased oven-proof mould.
  3. Bake in a preheated oven at 200 degree C for 45 minutes. When baked, remove from the mould and allow it to cool.
  4. For the caramel sauce, take sugar in a sauce pan and heat it down until it acquires a golden colour. Then add cream and butter and mix it well to form a thick, smooth sauce.
  5. Your pumpkin pudding is ready to be served with caramel sauce.
