SPICED PUMPKIN PUDDING
Ingredients
150 grams pumpkin
120 grams brown sugar
2 eggs
30 grams butter
120 grams condensed milk
2 grams nutmeg powder
2 grams cinnamon powder

For Caramel sauce
75 grams sugar
35 grams cream
50 grams butter

Method
- Cut pumpkin in small cubes and cook it in boiling water until tender.
- Cool this mixture down and make a puree, which should then be mixed with all other ingredients into a smooth paste. Pour this into a greased oven-proof mould.
- Bake in a preheated oven at 200 degree C for 45 minutes. When baked, remove from the mould and allow it to cool.
- For the caramel sauce, take sugar in a sauce pan and heat it down until it acquires a golden colour. Then add cream and butter and mix it well to form a thick, smooth sauce.
- Your pumpkin pudding is ready to be served with caramel sauce.
