MELON PUDDING
Ingredients
250 grams melon puree
375 grams non-dairy cream
23 grams gelatin
150 ml ice water
250 ml hot water
155 grams sugar substitute
375 grams non-dairy cream

For Jelly
100 grams melon puree
5 grams gelatin
10 grams honey
5 grams gelatin
10 grams honey
Method
- Make melon jelly by combining melon puree, gelatin and honey. Keep aside for a while.
- Soak gelatin powder in cold water and then melt on a double boiler.
- In the melon puree, add the melted gelatin water and sugar.
- Fold in the whipped cream.
- Fill in glasses and top with melon jelly and melon scoops.
